Marc Proenca is an award-winning Chef known for his fire-driven cooking and leadership across top restaurant groups. Formerly of Proud Mary, Marc earned a 1-Star Eat Out Award in 2024 and co-created Mamasamba, a bold Peruvian-fusion concept that won Best New Restaurant at the Best of Joburg Awards in 2023. Well-traveled and shaped by a broad culinary perspective, Marc brings an honest, ingredient-led approach to food—driven by a passion he’s proud to share, one plate at a time.

Sydwell Mayika
From humble beginnings as a sculler at The Pot Luck Club, Sydwell worked his way up to Head Barman, where his pioneering cocktails set a new standard. His passion for wine led him to pursue accreditation with the South African Wine Sommeliers Association, progressing through the levels before earning his place as Restaurant Manager at Salsify at The Round House, one of Cape Town’s most celebrated dining establishments.
Sydwell has a deep love for Bordeaux blends, admiring their ability to age gracefully, evolving into wines of profound depth and complexity. His expertise extends across South Africa, France, Spain, Italy, Portugal, Chile, and Argentina, curating a selection that offers guests a journey through the world’s finest vineyards.
